Sausage Gnocchi

6 sausages (chicken, pork, or veggie)
2 tbsp olive oil (split into 1 tbsp + 1 tbsp)
½ red onion, finely chopped
2 garlic cloves, finely chopped
¼ tsp fennel seeds
½ tsp dried mixed herbs
Freshly ground black pepper (generous amount)
2 tbsp tomato purée
400g tinned chopped tomatoes
400ml chicken stock
50ml double cream
1 pack shop-bought gnocchi
2 large handfuls baby spinach
Remove skins from 6 sausages

Browns in 1 tbsp olive oil, break into small pieces using a wooden spoon or spatula, then remove from the pan into a bowl and set aside.
Sauté ½ chopped red onion in 1 tbsp oil in the pan until soft.
Add 2 garlic cloves, ¼ tsp fennel seeds, ½ tsp mixed herbs & lots of black pepper — cook until fragrant.
Stir in 2 tbsp tomato purée, 400g chopped tomatoes, 400ml chicken stock & 50ml double cream. Simmer 10 mins.
Add gnocchi, nestle them in & cook 3-5 mins till tender but firm.
Return sausage + a couple of large handfuls of baby spinach and cook until wilted.
Serve with a lemony salad or garlic bread for the ultimate cozy dinner!
