CREAMY BUFFALO CHICKEN RICE

WHAT YOU'LL NEED:
• 680 g chicken breast, cubed • 1 tbsp olive oil • ¾ cup uncooked jasmine rice (140 g) • 2 cups chicken broth • ¼ cup buffalo sauce • ½ cup nonfat Greek yogurt (115 g) • ½ cup reduced-fat shredded mozzarella (56 g)

HOW TO MAKE IT:
• Cook chicken in oil until lightly
• Add rice, broth, and buffalo sauce. • Cover and simmer 18 minutes until rice is tender. • Remove from heat and stir in yogurt and cheese until creamy.
