Homemade Doritos

1 cup white cheddar cheese powder

2 tsp Paprika

2 tsp Onion Powder

2 tsp fine sea salt

1/4 cup buttermilk powder

1 Tsp ground annatto

10 white or yellow corn tortillas

1- 1.5 Oil to fry

In a bowl, add white cheddar cheese powder, paprika, onion powder, sea salt, buttermilk powder, ground annatto powder and mix until well blended

Add the oil to a wide, high-sided pot or cast-iron pan until it’s about ½ inch deep. Heat it over medium-high heat until it reaches 350.

Cut each tortilla into 6 triangles.

Add the tortilla triangles in a single layer to the hot oil. Use a slotted spoon or tongs to press them down gently. Cook for about 2 minutes, or until they are golden brown and crispy.

Remove from heat and place over paper towels. Transfer to a big bowl and toss with “Doritos” seasoning.

Baking Method:

BAKED TORTILLA CHIPS

Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper or use a silicone baking mat.

Cut the tortillas into 6 triangles. Spray or lightly brush the tortillas on both sides with oil.

Arrange the chips in one layer on the baking sheets. Bake until the chips are crisp and golden brown 15 to 20 minutes. Check the chips often, and if some are browning quicker than others, flip if needed. Transfer to a bowl and toss with “Doritos” seasoning mix
