Pita W/ Feta, eggs & honey (original)

1/2 avocado

kosher salt and freshly ground black pepper

fresh lemon juice

1 whole wheat pita (17cm)

1 cup baby argula

1 TBSP olive oil

2 eggs XL

2 TBSP crumbled feta cheese

Hot Honey

red pepper flakes (optional)

步骤

Scoop the avocado into a small bowl and use a fork to mash it with a pinch of salt, a few twists of black pepper, and a squeeze of lemon juice to taste. Set aside.

Wrap the pita in a damp paper towel and place it on a microwave-safe plate. Microwave the pita until warm, 20 to 30 seconds.

Spread the avocado mixture on the warm pita and top with the arugula.

Heat the oil in a large nonstick skillet over medium-high heat. When the oil sizzles, crack the eggs into the pan. Sprinkle evenly with the feta, a pinch of salt, and a few twists of black pepper. Cook until the yolks are set and the edges are crisp, 3 to 4 min-utes. You can cover the pan so the eggs will steam more quickly if you're in a rush. (Note that this may give the yolk a slight film of egg white and the edges won't be quite as crispy.)

Transfer the eggs to the prepared pita. Drizzle with hot honey to taste. If you want more spice, sprinkle with some red pepper flakes.
