Smash Dumplings

Serve em’ up with rice, kimchi and enjoy!
What you’ll need: 👩🏻🍳
1/2 small cabbage, finely chopped
1 lb ground chicken
1 tbsp ginger, minced
1 tbsp garlic, minced
1/2 cup green onions, sliced
1 tbsp soy sauce
1 ½ tsp toasted sesame oil
1 tsp salt
1 tbsp cornstarch
40 gyoza wrappers
Dipping sauce: 🥣
1 tbsp rice vinegar
3 tsp sour sauce
Chili oil (optional)
Sesame seeds (optional)

mix the dipping sauce ingredients in a small bowl and serve with gyoza’s🥟
Make it:
Place the chopped cabbage into a bowl and add a pinch of salt. Mix well. Let it sit for 10 minutes, then squeeze out and drain as much of the water as possible.
Add ginger, garlic, green onions, soy sauce, sesame oil, salt, and squeezed cabbage into a large bowl. Next add in the ground chicken. Mix until well incorporated.
Mix together 2 tbsp water with 1 tbsp of cornstarch. Pour slurry into prepared chicken filling. Mix well.
Lay the wonton wrappers on a large cookie sheet and using a cookie scoop if you have, scoop one tablespoon size amount of filling onto each wonton wrapper. ***(Alternately you can place 1 tablespoon of chicken filling directly into the pan and cover with wonton wrapper. Press with the back of a cup or anything flat to flatten the meat underneath the wrapper).
Heat some oil (I used a combination of sesame oil and avocado oil). When the oil is hot, place down as many prepared wontons as you can.
Smash using a glass, or spatula and press down on the gyoza wrapper smashing the filling flat onto the pan.
Cook until the meat is slightly golden, about 1-2 minutes. Flip and then add 1-2 tablespoons of water to the pan, cover and steam for 1 minute.
Remove the lid. Remove from the pan and enjoy with dipping sauce, rice and kimchi!
