Ice Cream Cake Isn’t Just for Birthdays

1/3 cup oil (any variety)

1 cup granulated sugar

2 eggs

1/3 cup light sour cream or yogourt

½ cup cocoa powder

½ cup white flour

1 ½ tsp baking powder

1/3 cup semi sweet chocolate chips

3 cups vanilla ice cream

Chocolate glaze

¾ cup semi sweet chocolate chips

2 tsp oil

Add oil, sugar, eggs and mix well.

Add sour cream and mix well, add cocoa and mix until combined.

Add flour, baking powder and chocolate chips until flour is combined.

Pour into a 9” x 9” square pan lined with parchment paper.  Bake at 350 F about 15 - 20 minutes or just until tester comes out dry. Let cool.

Cut cake in half and with a spatula place one half cake into a 9” x5” loaf pan lined with plastic wrap/ parchment paper.

Add half the ice cream, then place the other half the cake over top and top with remaining ice cream. Cover with plastic wrap/ parchment paper and freeze.

Pull cake out of pan using plastic wrap / parchment paper and place on a plate, ice cream side up.

Once frozen, melt chocolate and oil, microwave for 1 minute until smooth and pour over top of ice cream, serve or refreeze.

Optional: dust with icing sugar for serving. Enjoy!
