Lemon pepper chicken

All purpose flour: 4.2 oz/120g

Lemon pepper: 0.5 oz/1 tbsp

Fine salt: 0.2 oz/1 tsp

Lemon: 2, halved

Chicken breasts: 4, halved

Olive oil: 1 oz/2 tbsp

Chicken broth: 4 oz/120ml

Butter: 1 oz/2 tbsp

Garlic cloves: 2, minced

Parsley: For garnish

In a mixing bowl combine the all-purpose flour lemon pepper seasoning salt and zest from 1 lemon. minimal_rich_text

Slice each chicken breast into 2 thinner pieces so you have 8 pieces. Then add the chicken breasts to the flour mixture until completely coated. minimal_rich_text

Heat a large pan over a medium heat and then add the oil. When hot add the chicken breasts and cook on one side until golden and crisp for roughly 5 minutes. Then turn to the other side to cook. minimal_rich_text

Whilst the chicken is cooking slice the remaining lemon into rounds. Once the chicken is cooked through remove from the pan and place onto a clean plate to set aside. minimal_rich_text

Add the chicken broth butter minced garlic and lemon slices to the pan. Cook for a few minutes until the sauce has reduced and thickened. You can use a whisk to remove any lumps. minimal_rich_text

Add the chicken back to the pan to heat through spooning the sauce over the breasts. Serve warm with a sprinkling of fresh parsley on top.
