Easy Black Bean and Corn Soup (one Pot, 45 Minutes

Heat olive oil in a large pot over medium-high heat.

Sauté onion, celery, carrots & garlic for 5 mins.

Add chili powder, cumin & black pepper. Cook 1 min until fragrant.

Stir in 4 cups veggie broth, 2 cans beans & corn. Bring to a boil.

Blend remaining 2 cans beans, crushed tomatoes & 1 cup veggie broth until smooth.

Pour blended mixture into the soup. Reduce heat & simmer 15 mins.

Add jalapeño, sherry wine & salt if needed.

Garnish with avocado slices & serve hot.
