Sheet Pan Kebab Laffa 🌿🔥

Kebab:

1 lb ground meat (any)

1 bunch parsley

1 large onion

1 red pepper

3 garlic cloves

Optional 1 jalapeño

¼ cup tomato paste

1 tsp salt

1 tsp black pepper

2 tsp paprika

1 tsp turmeric

Salad:

2–3 beefsteak tomatoes (wedges)

1 large onion (wedges)

1 bunch parsley, chopped

Juice of 1 lemon

3–4 tbsp olive oil

1 tsp salt

1½ tsp sumac

Tahina:

1 cup sesame paste

1 cup ice-cold water (more if needed)

Juice of 1 lemon

1 tsp salt

To Serve:

Laffa or flat pita

How to make it:

1️⃣ Blend parsley, onion, pepper, garlic (and jalapeño if using) until mushy. Strain well, mix with meat, tomato paste & spices.

2️⃣ Spread on oiled sheet pan ½" thick. Score into strips/squares. Bake 15 min at 425°F, then broil 3–5 min to brown.

3️⃣ Toss tomatoes, onion & parsley with olive oil, lemon, salt & sumac.

4️⃣ Whisk tahina ingredients until creamy.

5️⃣ Build your laffa: kebab → salad → tahina → roll & devour.

Also amazing over rice with salad + tahina if you skip the bread.
