Dry Ingredients:

• 220g Wholemeal Flour • 90g Erythritol (130:100 ratio) • 1 tsp Bicarbonate of Soda • 2 tsp Ground Cinnamon • 3 tosp Linwoods Flaxseed Mix • ½ tsp Salt

Wet Ingredients:

• 3 Large Ripe Bananas (Mashed) • 3 Large Eggs • 75g Melted Coconut Oil (or Olive Oil) • 100ml Sproud Milk • 1 tsp Vanilla Extract

Instructions

1. Preheat: Set your oven to 165°C (Fan) or 180°C (Non-fan). Grease a standard loaf tin.

2. The Mash: In a large bowl, mash the bananas. Whisk in the 90g Erythritol and the 3 eggs until well combined and the sweetener begins to dissolve.

3. The Liquids: Stir in the melted oil, Sproud milk, and vanilla.

4. The Fold: Add the wholemeal flour, bicarbonate of soda, cinnamon, salt, and flaxseed mix. Stir gently until just combined. Do not over-mix.

5. Bake: Pour into the tin and bake for 50-60 minutes.

6. Test: A skewer in the center should come out clean. If the top browns too fast, cover loosely with foil at the 40-minute mark.

7. Cool: Let cool in the tin for 20 minutes before slicing to allow the Erythritol to set.
