Parboil the Pork: Simmer the pork shoulder for 7–10 minutes, then drain and rinse under cold water to remove any impurities.
Prepare the Aromatics: In a clean pot, add the pork along with the onion (root and skin intact), scallions, ginger, whole garlic cloves, and black peppercorns.
Slow Simmer: Cover with water and simmer on low heat for about 2 hours until the pork is tender. Be sure to skim off any excess oil or foam from the surface as it cooks.
Season: Once the pork is tender, season the broth to taste. I used salt, MSG, and black pepper.
Strain the Broth: Remove the pork and strain the liquid, removing the aromatics until only the clear broth remains.
Slice and Plate: Cut the pork into thin slices and place them over a bed of rice.
Assemble: Top with scallions and ladle the pork broth over the bowl.
Eat: Pair with kimchi if you have, or enjoy as is
