Trash-Talk Tacos

***For the tacos:***

1 1/2 pounds chicken thighs, boneless and skinless

1 (16-ounce) jar mild salsa

3 tablespoons honey

1 1/2 tablespoons canned chipotle peppers in adobo sauce, finely chopped

1 1/2 teaspoons kosher salt, plus more, to taste

1 teaspoon garlic powder

12 (6-inch) corn or flour tortillas, warmed

***Optional toppings:***

sour cream, to taste

avocado, to taste, sliced

cilantro, to taste

In a pressure cooker, add the chicken, the salsa, the honey, the chipotle peppers, 1 1/2 teaspoons of the salt, and the garlic powder and use tongs to toss well.

Place the lid on the pressure cooker and lock it in place.

Turn the steam release to the sealing position.

Select the "manual/pressure cook" setting, then "high pressure," and set for 8 minutes. It will take about 12-14 minutes for the pressure cooker to come to pressure before it starts to cook.

Carefully turn the steam release handle to the venting position, then let the steam fully escape, about 1-2 minutes.

Take the lid off the pressure cooker and transfer the chicken to a bowl, leaving the sauce mixture.

Select the "sauté" setting on the pressure cooker, then the "high temperature" setting.

Bring the sauce mixture to a boil, stirring occasionally, until it thickens, about 15 minutes.

Press "cancel" on the pressure cooker.

While the sauce mixture boils, use two forks to shred the chicken.

Place the shredded chicken in the sauce mixture and stir to coat.

Taste the chicken mixture and season with the extra salt, as needed. Stir to combine.

Serve the chicken in the warm tortillas topped with the sour cream, the avocado, and the cilantro.
