Grilled Chicken Souvlaki Platter

2 1/2 pound boneless skinless chicken thighs, cut into 2 inch pieces
1 cup Greek yoghurt
4 garlic cloves, minced
2 teaspoons dried oregano
Zest of 1 lemon, grated on a microplane
Juice of 1 lemon
1/4 cup olive oil
2 teaspoons sea salt
Fresh mint, parsley, and lemon wedges, to serve

First, marinade the chicken. In a bowl combine chicken, yoghurt, garlic, oregano, lemon zest and juice, olive oil, and sea salt, and mix well. Cover and chill in the fridge for 4 hours.
Preheat your Traeger Grill to 425 degrees F. Thread the chicken onto soaked skewers, then place on the grill and cook until golden, charred, and cooked through to an internal temperature of 165 degrees F.
Top with additional lemon juice, chopped mint, and parsley.
Tip:
Pair with a tomato-cucumber salad, tzatziki, thinly sliced red onion, olives, crispy fries, and warm pita for the perfect Mediterranean meal!
