Grilled Corn Ice Cream

2 ears yellow corn
1 cup granulated sugar
kosher salt
2 teaspoons vanilla extract
Chopped corn nuts, for serving
2 cups heavy cream
1 cup whole milk
7 large egg yolks

1. Grill corn:
Preheat grill to high.
Husk 2 ears yellow corn and transfer to the grill. Grill all over, turning corn only when kernels appear deeply golden and somewhat charred on the undersides, about 4 minutes per side. Let corn sit until cool enough to handle.
2. While the corn cools, make ice cream base:
Whisk to combine ⅔ cup sugar and 7 egg yolks in a medium bowl.
In a medium saucepan, combine 2 cups heavy cream, 1 cup whole milk, and ¾ teaspoon salt. Bring to a near-boil over high heat, stirring.
Gradually add hot milk mixture to egg yolk mixture, ladleful by ladleful, whisking continuously.
Return contents of bowl to the saucepan and place over medium heat. Cook, stirring continuously and scraping the sides and bottom of the pot with a spatula, until mixture thickens and coats the back of a spoon, about 6-8 minutes. Remove from heat and add 2 teaspoons vanilla extract.
Remove kernels from the grilled corn and add to a blender, along with the ice cream base from the saucepan. Blend on low speed, working your way up to high, until mixture is very smooth, about 2 minutes. Cool.
3. Transfer and Serve:
Transfer mixture to ice cream machine and freeze according to instructions.
Serve, topped with crushed corn nuts!
