Thick, soft, loaded with all the essentials (plus crushed pineapple for extra 💦), and topped with the dreamiest cream cheese frosting.
This is my forever Easter cake.
RECIPE✔️
Cake Ingredients:
1½ cups sugar
⅔ cup brown sugar
1 cup oil (veg or canola)
½ cup buttermilk
4 eggs
2 tsp vanilla
½ cup crushed pineapple
2¼ cups flour
1½ tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¼ tsp ginger
½ tsp salt
¼ tsp nutmeg
2½ cups finely grated carrots
1 cup chopped pecans (opt)
1 cup golden raisins (opt)
Frosting:
16 oz cream cheese, soft
¾ cup butter, soft
2 tsp vanilla
4–5 cups powdered sugar

Preheat oven to 350°F. Line three 8” pans with parchment.
Whisk wet ingredients together (eggs → pineapple).
Mix dry ingredients in a separate bowl.
Combine wet + dry. Fold in carrots, pecans, and raisins.
Divide into pans and bake 25–30 min. Cool completely.
Beat frosting ingredients until fluffy.
Stack and frost layers. Press more pecans onto sides if you’re feelin’ fancy.
Chill 30 min before slicing. 🤌
