angel-ed eggs (avocado deviled eggs)

12 large eggs

1 ripe avocado

½ cup Homemade Mayonnaise (page 320) or store-bought

Zest and juice of 1 organic lemon

½ teaspoon salt

½ teaspoon freshly ground black pepper

4 slices cooked bacon

步骤

Bring a large pot of water to a boil and carefully add the eggs. Reduce the heat to medium-high and boil for 12 minutes. Drain and add cool water to the pot. When the eggs have completely cooled, carefully peel and slice in half lengthwise. Place the yolks in a food processor.

Halve the avocado, remove the pit, and scoop the flesh into the food processor with the yolks. Add the mayo, lemon zest and juice, salt, and pepper. Pulse in the food processor until smooth.

Spoon or pipe the yolk filling into the egg-white halves. Roughly chop the bacon and sprinkle on top, and serve.
