Peppermint Patties w/ 5-ingredients

Peppermint Filling
1/4 cup coconut butter (also called coconut manna)
1/4 cup + 2 tbsp coconut oil
2 tbsp raw honey (or pure maple syrup)
1 tsp pure peppermint extract
Chocolate Coating
10 oz dark or semi-sweet chocolate (I use dairy-free, refined-sugar-free chocolate)
1 tbsp coconut oil

Make the filling: Combine the coconut butter and coconut oil and gently heat until the oil is melted and the butter is runny (either over very low heat on the stovetop or in the microwave). Remove from heat and stir until smooth. Add the honey (or maple syrup) and peppermint extract, then refrigerate the mixture for 1 hour.
Cream the mixture: After chilling, stir the filling until smooth and creamy. If it’s too firm to stir, let it sit at room temperature for a few minutes.
Shape the patties: Scoop small amounts of the filling onto a parchment-lined tray (you’ll get about 14 dollops). Place another sheet of parchment on top and gently press each dollop into a flat, circular shape.
Freeze: Freeze the shaped patties for several hours, or until fully solid.
Melt the chocolate: Once the patties are frozen, combine the chocolate and coconut oil and melt together, stirring often to avoid burning.
Coat the patties: Remove the patties from the freezer and coat each frozen patty in the melted chocolate, then place back on a parchment lined tray. Pro Tip: only take a few patties from the freezer at a time—keeping the rest frozen makes dipping way easier!
Set and store: Refrigerate the peppermint patties until the chocolate hardens, then enjoy! Store in the fridge for up to 5 days or freeze for longer storage.
