Andy’s Caesar Dressing Recipe

2 or 3 cloves garlic
1 egg
1 tbsp Dijon mustard
2 1/2 tbsp maple syrup
juice of 1 lemon
1 tbsp Worcestershire sauce
1 1/4 cups fresh shredded Parmesan
5 capers
1/4 cup apple cider vinegar
1 tbsp fresh cracked pepper
1/2 tsp salt
1 filet anchovy (optional)
1 1/4 cups vegetable oil
步骤
Add all ingredients—except for the vegetable oil—into a blender.
Start blending on medium speed until the mixture is fully combined and smooth.
Slowly stream in the vegetable oil through the top of the blender while it’s running. This allows the dressing to emulsify and become creamy.
Blend until smooth and creamy, then taste and adjust seasoning if needed.
Transfer to a jar or airtight container and store in the fridge until ready to use.
