Crispy Chicken Green Goddess Salad

Since it’s coming towards the end of the year, I thought I’d share my most viral recipes of 2025! Starting off strong with this green goddess salad with a kick 🔥
Fresh, spicy and so satisfying, this one is a must try and save☝🏼

Green goddess salad (serves 4):
Dressing:
1 cup of spinach
1 cup of fresh basil
Handful of fresh parsley
2 cloves of garlic
1/2 red onion
5-6 slices of jalapeños from a jar or 1 jalapeño
Pinch of chilli flakes (optional)
50g of walnuts
Juice of 1 lemon
1 avocado
3 tbsp of olive oil
2 tbsp of white rice vinegar
1/2 tsp of salt
4 tbsp of grated parmesan
1/4 cup of water
1 head of cabbage, finely chopped
2 spring onion, diced
2-3 small cucumbers, finely chopped
Crispy chicken (per 1 portion):
100g of uncooked chicken breast
1 egg or egg white, whisked
10g of panko breadcrumbs
1 tsp of Italian seasoning
1 tsp of grated Parmesan
1 tsp of garlic granules

Mix the panko breadcrumbs, garlic granules, Italian seasoning and parmesan together. Beat down the chicken breast. Whisk the egg. Dip the chicken into the egg, shake off excess liquid then coat in the breadcrumbs. Spray with oil and air fry at 180°C for 20 minutes until browned and crispy.
Add all of the dressing ingredients to a food processor and blend until smooth. Add water after blending first then blend again (add more water if needed).
Finely chop the cabbage, spring onion and cucumber. Add to a bowl and pour in the dressing. Mix everything well.
Serve a portion of the salad with the chicken. Garnish with some extra parmesan.
