Gluten-free Almond Double Chocolate Biscotti

2 eggs
¼ cup oil
¾ cup sugar
¼ cup cocoa
2 tbsp cornstarch
1 tsp baking powder
1 ¾ cup almond flour
¾ cup chocolate chips
1/8th tsp salt
Garnish: melted white chocolate if desired

In large bowl add eggs, oil, sugar and mix well. Add cocoa. cornstarch, baking powder, almond flour, chocolate chips and salt and mix until combined.
Form a 12”x 3” log on a baking sheet lined with parchment paper. Bake at 350 F for 40 minutes.
Let the biscotti cool for 10 minutes, then turn oven down to 325 F. Slice biscotti into 1” cookies and lay on their side.
Bake for another 20 minutes until browned. Let cool to harden.
Drizzle melted white chocolate over top if desired. Enjoy!
