配料

30 to 35 mint leaves, chopped

8 roma tomatoes, large dice

1/2 onion, large dice

6 garlic cloves, minced

3 to 6 chiles moritas, sliced

6 yellow potatoes, large chunks

4 carrots, large slices on an angle

3 calabacitas, large chunks

2 LBS of ground beef

1 cup uncooked white rice

2 eggs

In a stock pot, on medium heat, add a drizzle of oil. Add the diced onion. Cook until onions are translucent.

Add tomatoes and cook until they are "jammy". Add garlic and continue to cook.

To a large bowl, add the ground beef, 1 tbls salt, pepper, mint, 1 cup uncooked white rice. With clean hands, combine everything. Don't overwork the mixture.

Once it is all mix, add two eggs. Mix well.

Use a spoon or measuring cup to separate the meat into balls of equal size. Roll and lightly squeeze to form.

To the tomato onion garlic jam, add a tbls of salt and the chiles. Mix together. Carefully drop in the meatballs and add 1 cup of water and cover.

After cooking for 10 to 15 minutes, the meatballs should be firmer. Add 12 cups of water. Then add the carrots, potatoes, and 2 tbls of bouillon. Mix everything well and cover for anotherr 20 to 30 minutes on medium heat.

After 20 to 30 minutes have passed, add squash and cover for another 15 minutes.

Serve with lime and burnt tortilla.
