Flourless Chocolate Cakes for Two

6 tbsp (85g) salted butter

6oz (170g) chopped dark chocolate or chocolate chips)

3 eggs, at room temperature

1/4 cup (55g) light brown sugar

1/4 cup (50g) granulated sugar

2 tsp (8g) vanilla bean paste or extract

Optional: 1 tsp (2g) instant espresso powder

1/4 cup (24g) unsweetened dutch process cocoa powder

1/4 tsp salt

Powdered sugar

Vanilla ice cream

Flaky sea salt

Preheat the oven to 350F. Grease 2, 12oz ramekins or 4, 8oz ramekins generously with butter. Set aside.

Start by preparing the chocolate mixture. In a medium bowl, add the butter and chopped chocolate. Place the bowl in the microwave and heat at 30-second intervals, giving a good stir in between each, until the butter and chocolate are fully melted together. Set aside to cool.

In a separate large bowl, use an electric handheld mixture or whisk to beat the eggs and both sugars together, until frothy and the sugar is mostly dissolved.

Add the vanilla and instant espresso powder (if using), and whisk to combine.

Once the chocolate mixture that you previously prepared is cooled (it’s fine if it’s still a little warm), add it into the egg mixture and whisk to combine, until all of it is fully incorporated.

Then, fold in the cocoa powder and salt.

Fill a large measuring cup with water, and microwave for 2-3 minutes to warm the water up. Then, carefully pour the warm water into the baking sheet until almost full.

Place the baking sheet with the ramekins onto the middle rack of your oven.

For 12oz ramekins, bake at 350F for 35-40 minutes, until the top is cracked but the middle is still slightly wet. When a toothpick is inserted into the enter, it should have some thick batter and a few crumbs on it.

For 8oz ramekins, bake at 350F for 25-30 minutes.

Remove the baking sheet from the oven and then immediately remove the ramekins from the water bath.

Allow to rest for 5 minutes. Then serve warm with a dusting of powdered sugar, a scoop of vanilla ice cream, and some flaky sea salt, if desired.
