Triple Chocolate Chip Muffins

1/2 cup Unsalted butter

5 oz Semisweet chocolate, coarsely chopped

2 cups All purpose flour

1 tsp Baking powder

1 tsp Baking soda

1 1/2 tsp Salt

1 tsp Instant espresso powder (or 1 tsp vanilla)

1/2 cup Brown sugar, packed

2 large Eggs

2/3 cup Buttermilk

1 cup Semisweet dark chocolate chunks

1/2 cup White chocolate chips (optional)

步骤

Line muffin tin (12 cups) and preheat oven to 350F.

Set a saucepan of water to a simmer over medium heat.

Melt chocolate and butter together in a bowl over the saucepan (double-boiler). Set aside to cool slightly.

Mix together dry ingredients (flour, powder, soda, salt, espresso).

Add the brown sugar to the melted chocolate and mix

Add the egg and buttermilk to the melted chocolate, Whisk to blend.

Dump the dry ingredients into the wet and fold gently.

Fold in the semisweet chocolate.

Bake at 350F for 20-23 minutes. Cool 5 minutes and then remove from pan.

Drizzle with melted white chocolate if desired.
