Think creamy, crunchy, chocolatey layers stacked into the easiest no-bake pie ever. It’s basically the Good Humor eclair bar reimagined — bigger, bolder, and made for sharing.

Fudgy ganache center

Silky ice cream filling

Crunchy cookie crumb topping

Every slice is pure nostalgia with a chocolatey twist. Who’s saving this recipe ASAP?

RECIPE:

For the Cookie Crust & Crumble:

1 box of Oreo (or other brand) chocolate sandwich cookies

1/3 cup oil

For the chocolate Ganash:

8 oz semi sweet chocolate chips

2 tbsp. Oil

1/4-1/3 cup non dairy whip (I use 1 16oz non dairy whip container for this whole recipe)

For the Chocolate Mousse Whip

The rest of the Non Diary whip (1 2/3 cup)

1 package instant chocolate pudding (80 grams)

Blend all the Oreos in a food processor till you have a fine crumb.

Add the oil and process for a few seconds to combine - the Oreos should stick together when pressed

Take your try pan or pie pan, spray very well and line with parchment and spray that too.

Than press down the cookie lnto pan forming a crust. Stick it back into freezer while you prep the ganache and mousse.

In a microwave bowl melt the chocolate and oil

Stir until starts to melt

Pour a like of the non dairy whip in a mug and microwave for a minute. Pour some of the warm whip into the melted chocolate and mix till combined. Pour as little or as much as you need to get a thick ganache.

Yup the rest of the whip together with the pudding mix until thick and can hold shape.

Now assemble the pie. Coat a bottom layer of ganache. Then add some whip on top and spread smooth. Make a long indent down middle of pie with a spoon . Fill it with ganache, then top with rest of the mousse.

Spread flat. Then top with the rest of the cookie crumbs.

Freeze overnight
