Greek Yogurt Zucchini Bread

1½ cups grated zucchini (about 2 medium)

2 large eggs

½ cup plain Greek yogurt (adds protein)

⅕ cup erythritol or monk fruit sweetener (swap for honey/maple for less diabetic-friendly)

¼ cup olive oil or melted coconut oil

1 tsp vanilla extract

1 tsp baking powder

½ tsp cinnamon (optional)

1 cup almond flour (swap all-purpose flour for low-carb)

Preheat oven to 350°F (175°C).

Mix eggs, yogurt, oil, vanilla, and sweetener until smooth.

Stir in zucchini.

In a separate bowl, combine almond flour, baking powder, and cinnamon.

Fold dry ingredients into wet until just combined.

Pour batter into greased loaf pan.

Bake 40-45 mins or until a toothpick comes out clean.
