Spicy Eggplant with Pork & Tofu

1 Ib ground pork
1 block firm tofu
2 lbs Japanese eggplant
2 tbsp garlic
2 tbsp ginger
1/4 cup shaoxing cooking wine
1/4 cup doenjang
2 tbsp chili garlic sauce or sambal oelek
1 cup and 2 tbsp water
1 bunch green onions
1 bunch cilantro
1/2 tsp red pepper flakes

1. Prepare the ingredients: Cut tofu into 1-inch cubes. Cut eggplant into 1-inch slices, and then quarter the slices. Mince garlic and ginger. Chop cilantro and green onions.
2. Brown the meat: Heat a large sauté pan or shallow pot over medium-high heat. Add the sesame oil and ground pork, and sauté until meat is browned.
3. Add the chopped garlic and ginger, stir and cook for a minute. Then, add the sliced eggplant and cook until soft. Season with salt and pepper.
4. Make the sauce: Deglaze the pan by adding Shaoxing cooking wine and stirring well. Add doenjang, sambal, red pepper flakes (to taste), and 1 cup water. Simmer over medium heat for 8-10 minutes.
5. Add the cubed tofu and simmer for an additional 8-10 minutes.
6. Make the cornstarch slurry: In a bowl, mix 1 Tbsp of cornstarch with 2 Tbsp of water, stirring well until the cornstarch is fully dissolved. Add to the pan and stir well to thicken the sauce. Taste, and readjust seasoning as needed.
7. Finish the dish: Add chopped cilantro, stir, and remove from heat.
8. Plate: Garnish with chopped green onions, and enjoy.
