🥗 Chicken Tzatziki Bowls Recipe

1 ½ lbs (680g) boneless, skinless chicken breasts or thighs

¼ cup (60ml) olive oil

3 tbsp lemon juice (freshly squeezed)

3 cloves garlic, minced

1 tsp dried oregano

½ tsp cumin

½ tsp salt

½ tsp black pepper

1 cup (240g) Greek yogurt (full-fat or low-fat)

½ cucumber, grated and squeezed to remove excess liquid

1 tbsp lemon juice

1 tbsp olive oil

1 clove garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried)

½ tsp salt

2 cups cooked rice, quinoa, or cauliflower rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

1 tbsp olive oil (for drizzling)

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper.

Add the chicken and coat evenly. Cover and refrigerate for at least 30 minutes or up to 12 hours for maximum flavor.

Grate the cucumber and squeeze out excess water using a paper towel or cheesecloth.

In a bowl, mix Greek yogurt, lemon juice, olive oil, garlic, dill, and salt.

Stir in the grated cucumber and combine well.

Cover and refrigerate for at least 15 minutes to let the flavors develop.

Heat a grill pan or skillet over medium-high heat.

Cook the chicken for 5-6 minutes per side, or until fully cooked (internal temp 165°F/75°C).

Remove from heat and let it rest for 5 minutes, then slice.

Divide rice or quinoa into serving bowls.

Add sliced chicken, cherry tomatoes, cucumbers, red onion, and olives.

Drizzle with tzatziki sauce and sprinkle with feta cheese.

Finish with a drizzle of olive oil and fresh dill.

Serve immediately while fresh, or store in meal prep containers for later!
