Baked Apple Pancakes

2 Tablespoons butter
2 large apples, peeled, cored and sliced into thin wedges
3 Tablespoons brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
3 Tablespoons of maple syrup
1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup whole milk
1 teaspoon vanilla
1 Tablespoon orange juice
Powdered sugar

Preheat oven to 375 degrees. Melt butter in a large skillet over medium heat. Add apples and stir until they are coated. Add sugar and cinnamon and sauté until apples are softened a bit, about 6 to 8 minutes. Pour mixture into a pie pan and top with pecans and syrup. Place pan in the oven.
Meanwhile, combine flour, baking soda, baking powder and salt. Set aside. In a large bowl mix together eggs. milk, vanilla and orange juice. Add flour mixture and stir until just combined. Open oven and slide out rack with pie pan. Carefully pour batter over apple mixture. Slide rack back in place and close oven. Bake for 18 to 20 minutes; until pancake is nicely browned.
Remove pan from the oven and slice pancake into wedges. Dust each slice with a bit of powdered sugar and serve with maple syrup.
Optional apple syrup: Peel, core and chop one large apple into small pieces. Sauté with 1 tablespoon of butter in a medium saucepan for about five minutes. Add one cup of maple syrup and simmer until is warm. Pour mixture over slices of apple pancakes.
