Creamy Lime Chicken, Avo And Quinoa Bowl

1 cup quinoa, rinsed

2 cups water or chicken broth

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper to taste

2 ripe avocados, diced

For the Creamy Lime Dressing:

1/4 cup Greek yogurt

2 tablespoons mayonnaise

Zest and juice of 1 lime

1 tablespoon olive oil

1 small garlic clove, minced

Salt to taste

Combine quinoa and water in a saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until fluffy. Set aside.

Season chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

Heat a skillet over medium heat and cook chicken for 5–6 minutes per side until golden and cooked through. Rest, then slice.

In a small bowl, whisk together all dressing ingredients until smooth and creamy.

Assemble bowls with quinoa, sliced chicken, and diced avocado.

Drizzle generously with creamy lime dressing and serve immediately.
