Chicken Marinade:
chicken thighs
2 tbsp ginger garlic paste
1 tsp kashmiri chili powder
1 tsp turmeric powder
2 tbsp garam masala
1 tsp orange food coloring (optional)
1/2 cup of ghee
1 cup yogurt
Salt to taste
Butter Chicken:
Ghee
2 onions, chopped
1 tsp cardamom
1 tsp cumin seeds
2 tbsp ginger garlic paste
1 tsp kashmiri chili powder
1 tsp coriander powder
1 tsp garam masala
½ cup cashews
1 ½ cup of crushed tomatoes
Chicken stock as needed
1 cup of cooking cream
6 cubes butter
1 tbsp fenugreek leaves
Salt & pepper to taste
Garnish:
Cilantro

Marinate the chicken with everything under “Chicken Marinade.” Heat ghee and sear the chicken until fully cooked. Remove, chop into bite-sized pieces, and set aside.
In the same pot, sauté the onions until softened. Stir in the spices — cardamom, cumin, ginger-garlic paste, chili powder, coriander, and garam masala l
Add the cashews, crushed tomatoes, and chicken stock, then bring to a simmer for 10–15 minutes.
Stir in the cooking cream, butter, fenugreek, and season with salt and pepper. Mix until fully combined and cook for another 15 mins
return the chopped chicken to the pot
