Korean Tofu Vegetable Stir Fry with Gochujang Sauce

Stir Fry
14 oz extra-firm tofu, pressed & cubed
1 onion, diced
3 cloves garlic, minced
2 medium carrots, diced
2 cups broccoli, blanched
1 cup red pepper, cut into chunks
Gochujang Sauce
3 tbsp gochujang
3 tbsp boiling water
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sriracha
½ tsp red chili flakes (optional)

Sauté onion & garlic in a large skillet until fragrant (4–5 min)
Add carrots and cook while you prep the sauce
Whisk together all sauce ingredients in a bowl
Add tofu & veggies to the pan, pour in sauce, toss to coat
Once tender, drizzle with sesame oil & remove from heat
