Nana’s Cheese Cake

Crust
1 1/4 cup Graham Cracker Crumbs
1/4 cup sugar
1/4 pound butter or margarine (melted)
Cream Cheese filling
2 - 8 ounce package Cream Cheese
1/4 cup sugar
3 eggs
1/2 teaspoon vanilla
1/2 teaspoon Lemon Juice
Topping
1/2 pint Sour Cream
1/3 cup Sugar
1 teaspoon Vanilla

Crust
Process your graham crackers in a food processor (or place them in a large ziploc bag and use a rolling pin to crush them) until you have fine, sandy crumbs.
Transfer your crumbs to a bowl and stir in the sugar.
Toss the ingredients together until all of the crumbs are moistened and the mixture is well-combined.
Transfer your crumbs to your pie plate or springform pan and press them into the bottom of the pan.
Bake crust at 325 degrees F for 10 minutes.
Cool for 15 minutes before filling.
Filling
Cream together cream cheese and sugar.
Add eggs, vanilla and lemon juice.
Pour filling into graham cracker crust
Bake for 20 minutes in a 325 degree F oven
Cool for 15 minutes
Topping
Beat together the sour cream, sugar and vanilla.
Pour the topping over cream cheese filling.
Bake for 5 minutes
Chill before serving
