Watermelon Berries & Feta Salad

This is one of my favorite fruit salad combinations for a reason. If you need a healthy summer salad recipe with all the right notes, check this out. The watermelon, feta, mint combo is a classic and amazing on its own, but when you add berries, lime, and pistachios into the mix, it makes for an amazing lineup.

You can adjust your ratios however way you want depending on what you like and feel free to make any substituations as you wish, too!

Here is how I made it:

1.Start with a big base of watermelon - I cut these in smaller chunks, about 1/4 inch on each side. I went with about 4-5 cups of cubed watermelon.

2.Add 4oz blueberries & 4oz of raspberries.

3.Add 1/3 cup fresh chopped mint. This is important.

4.Add the zest of 1 large lime & squeeze the juice over the watermelon.

5.Add 4-5oz of feta chunks or crumbles over the top.

6. Add 2 tbsp of the highest quality olive oil you can find.

7.Add a couple small pinches of sea salt (dont go overboard since feta is quite salty)

9.Add 1 tbsp or two of chile lime seasoning or tajin.

10.Toss well, & right before serving, add 1/3 to 1/2 cup of freshly toasted pistachios.

11.Toss well (gently!) so as to not crush the watermelon, then give it a taste and modify as needed.

This is best served IMMEDIATELY (and even better outside during the summer 😎)
