1/ In a saucepan, pour 160ml of milk, 250g of sugar and 25g of neutral honey. Scrape half a vanilla pod and add the seeds to the milk then a little fleur de sel.
2/ Place the pan on the fire to heat the milk until it boils.
3/ Add 160g of butter. Mix over medium heat until the preparation obtains an amber color. (This step is long and progressive it is completely normal. Caramel can take up to 20 minutes before obtaining the amber color)
4/ Then pour the caramel into a small square or rectangular dish lined with baking paper.
5/ Let it cool then place in the fridge until the caramel plate has hardened.
6/ Unmold and remove the baking paper, cut small squares of caramel and pack each caramel in bags or using baking paper.
