Sweet Potatoes With Hot Honey & Whipped Feta

3 American Sweet Potatoes

3 tbsp olive oil

3 tsp smoked paprika

3 tsp garlic powder

3 tsp onion powder

3 tsp salt

1 tsp pepper

8 oz feta cheese

1/4 cup Greek yogurt

3 tbsp olive oil

1 tsp pepper

1 tbsp lemon juice

Hot honey drizzle (goes on the dip as a garnish after)

Set oven to 400 F and line a baking sheet with parchment paper

Peel the skin off and chop your American sweet potatoes into small cubes and add them on the baking sheet

Toss them in olive oil and spices and make sure they are well coated and spread out on the baking sheet (this will ensure they cook and caramelize evenly in the oven) and bake for 30 minutes (flipping half way)

While they bake, make your whipped feta by adding everything to a food processor and blending until smooth. Make sure, you pat your feta dry if it comes in any brine/water- you don't want to add the feta brine to the food processor or else your dip will be watery

Add the whipped feta to a dish and top with sweet potatoes

Then add on a drizzle of hot honey and enjoy this appetizer with crackers and pita!
