> 1 CAN (15 OZ) CHICKPEAS,

DRAINED AND RINSED > 1 LARGE CUCUMBER, DICED > 1/4 MEDIUM RED ONION,

THINLY SLICED › 2 TBSP CRUMBLED FETA

› 1 TBSP FRESH PARSLEY,

CHOPPED

FOR THE DRESSING: > 2 TBSP OLIVE OIL > 2 TBSP FRESH LEMON JUICE > 1/2 TSP GROUND CUMIN > 1/4 TSP SALT + 1/8 TSP BLACK

1. DRAIN AND RINSE CHICKPEAS, THEN PAT CHICKPEAS DRY WITH A PAPER

2. DICE CUCUMBER AND THINLY SLICE RED ONION, THEN ADD CUCUI AND RED ONION TO A BOWL WITH CHICKPEAS.

3. TOSS CHICKPEAS, CUCUMBER, AND RED ONION TOGETHER IN A MI

4. WHISK OLIVE OIL, FRESH LEMON JUICE, GROUND CUMIN, SALT, AND BLACK PEPPER UNTIL COMBINED.

5. POUR DRESSING OVER CHICKPEA SALAD AND TOSS UNTIL EVENLY

6. TOP CHICKPEA SALAD WITH CRUMBLED FETA CHEESE AND FRESH PARSLY, THEN SERVE IMMEDIATELY OR CHILL FOR 10 MINUTES.
