Cashew Clusters

I used to be obsessed with the cashew clusters from Costco (iykyk) & have been making them at home for so long now, I don’t know how I haven’t shared! Made with 5 simple ingredients, these are packed full of nutrients, healthy fats, & naturally sweetened with a little maple syrup!
They’re versatile, so you can switch up the nuts & seeds you use & are vegan & gluten free ☺️
3/4 cups cashew pieces
3/4 cups almonds
1/2 cup pumpkin seeds
Good Pinch of sea salt + 1 tsp vanilla
1/4 cup maple syrup
You can also add a little cinnamon!)
步骤
Mix everything together in a large bowl, making sure all of the nuts are coated. Use a mini muffin tin (or similar like mold) & add some of the mixture to each one, packing it down the best you can (don’t make these on a cookie sheet. They won’t turn out).
Bake at 350f for 18-20 mins until golden. Stick the pan in thr fridge for 30ish mins to let them cool/firm up. Then remove from the tin. Store in an air right container!
