Only Yesterday Onion Soba

8 1/2 ounces (240 g) fresh soba noodles (60 g/person)
3/4 cup (100 g) of edamame
4 spring onions
4 slices Chinese cabbage cleaned and rinsed (could also use purple cabbage)
3 1/2 ounces (100 g) firm tofu
3/4 inch (1 cm) fresh ginger
1 tsp sesame seeds (optional)
1 tsp. nori powder (optional)
Shichimi togarashi
olive oil
2 tbsp salted soy sauce
1 tbsp mirin or rice vinegar or cider vinegar
1 tbsp homemade ketchup
1 tbsp worcestershire sauce
1 tsp honey

1. Prepare the yakisoba sauce: in a mixing bowl, pour and mix all the ingredients for the sauce. Put it to one side.
2. Begin setting up: remove the seeds from the edamame. Seperate the white and green parts of the spring onions: finely chop the white parts and mince the green and set aside. Thinly slice the cabbage and dice the tofu into 5 mm cubes. Peel and finely chop the ginger. Rinse the noodles under cold water and set them aside for a few moments. The setting up is ready, we can now move onto cooking.
3. Drizzle the olive oil into a wok or large frying pan and heat over high heat. Add the chopped whites of the onions and the edamame and sauté for 1 minute before lowering the heat to medium and adding the ginger and cabbage. Sauté for another minute before adding the sobas. Mix well and sauté for another 5 minutes before adding the diced tofu. Drizzle with a good amount of yakisoba sauce and mix well! When the mixture is hot and coated with the sauce, place it on the plates of your guests.
4. Finish off the dressing by adding 1 pinch of shichimi togarashi, nori powder, green onions, and sesame seeds to each plate. Enjoy!
