Cookies That Crunch and Hit Your Goals
Makes ~18 cookies

1¾ cups almond flour
1/4 cup maple syrup
2 tbsp melted coconut oil
1 tsp cinnamon
2 tbsp shredded coconut
Pinch of salt

Mix everything until dough forms.
Roll between parchment sheets (~½ cm thick).
Cut into shapes and bake at 180°C for 13–15 min.
Let them cool fully to get that crunch.
Too crumbly? Add 1 tsp coconut oil at a time. Too sticky? Sprinkle almond flour.
