1 tsp baking soda
1 tsp sea salt, plus more to taste
1 1/2 tsp citric acid (or 2 tbsp lemon juice, or more to taste)
1 small clove garlic (optional)
1-inch piece of a long green hot chile pepper, roughly chopped
1/2 cup ice cubes
1 1/2 cups tahini
Toppings:
3/4 cup cooked chickpeas (from Step 2)
Cilantro sauce (see below) or chopped cilantro
2 tbsp tomato seeds from raw tomatoes
Extra-virgin olive oil
