Shrimp Cucumber Boats (20g Protein Per Boat)

Season your shrimp with 22 shrimp (23g protein per 8 shrimp):
1 tbsp extra virgin olive oil
2 tsp paprika
2 tsp garlic powder
2 tsp oregano or Italian seasoning
1 tsp salt
On medium-high heat, add your shrimp into your pan. Cook on each side for 2-3mins or until pink and fully cooked/crispy on the edges.
Wash one cucumbers thoroughly. Slice the cucumber in half, then cut the halves in half. Using a spoon, scoop out the seeds from each half. I would scoop out a good portion of the cucumber as well, leaving a thin layer of the cucumber for the shell of your boats.
High Protein Sauce:
1 cup plain greek yogurt
2 tbsp sriracha
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
Stir until well combined. To drizzle the sauce easily, add it to a clean ziplock bag and push all of it to one corner. When ready to use, cut a small hole in the corner and drizzle.
Assemble: On top of each of the cucumber boats, add cooked rice, thin slices of avocado, your cooked shrimp and some jalapeño slices (leaving the seeds if you want that extra spice). Drizzle some of the high protein sauce on top.
