Creamy Cajun Shrimp Over Fluffy Mash—save This

Shrimp & Sauce
1 lb large shrimp, peeled & deveined
2 tbsp butter
1 tbsp olive oil
3 cloves garlic, minced
1 tbsp Cajun seasoning
1 cup heavy cream
1/4 cup chicken broth
1 tsp lemon juice
1/4 cup grated Parmesan
Salt & pepper, to taste
2 tbsp parsley, chopped
Mashed Potatoes
2 lbs potatoes, peeled & boiled
4 tbsp butter
1/2 cup milk or cream
Salt & pepper, to taste

Mash the base
Mash hot potatoes with butter, milk/cream, salt, and pepper until smooth and fluffy. Keep warm.wz
Sear the shrimp
Heat butter + oil in a skillet (med-high). Toss shrimp with Cajun seasoning; cook 1–2 min/side until pink and lightly golden. Remove.
Build the sauce
Lower heat to medium. Sauté garlic 30 sec. Add broth, cream, and lemon juice; simmer 2–3 min until slightly thick.
Finish creamy
Whisk in Parmesan; season to taste. Return shrimp and any juices; simmer 1–2 min until glossy and coated.
Plate like a pro
Spoon mashed potatoes into bowls, top with shrimp and plenty of sauce. Shower with parsley.
