Crab pasta

12 oz rotini pasta

12 oz lump crab meat (picked clean)

1/2 cup celery, finely diced

1/4 cup green bell pepper, finely diced

1/4 cup red bell pepper, finely diced

1/4 cup red onion, finely diced (soaked briefly)

2 tbsp fresh parsley, chopped

add a little grated garlic)

1/2 shallot (optional)

1 cup mayonnaise

1/4 cup sour cream

1 tbsp Dijon mustard

1 tbsp horseradish

1 tbsp lemon juice

1 tsp apple cider vinegar

1 tsp Old Bay seasoning

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt & black pepper to taste

Optional: dash of hot sauce

Cook rotini in salted water until al dente. Drain and rinse cold.

Soak diced red onion briefly in cold water, then drain.

Whisk together mayo, sour cream, Dijon, horseradish, lemon juice, apple cider vinegar, and seasonings.

Toss pasta with celery, peppers, onion, and parsley.

Gently fold in crab meat(I sauté mine with a little “slap yo mama”)

Chill 30-45 minutes (or overnight) before serving.
