Crunchy, Cheesy, Honey-drizzled Perfection! These Phyllo Bit

8 sheets phyllo pastry
¼ cup olive oil (extra for drizzling into bottom of muffin tin and over top)
6 oz grated cheese about 1 ½ - 2 cups) (either parmesan, mozzarella or gruyere or a combination)
3 tbsp honey
¼ cup toasted sliced almonds

Remove 8 sheets from phyllo packages. Brush oil over every 2nd sheet.
Sprinkle with cheese and roll up tightly from longer end.
Cut into 12 rounds. Drizzle a little olive oil into bottom of a 12 cup muffin tin. Place each roll into pan. Drizzle with a little more olive oil.
Bake at 425 F for 20 – 25 minutes or just until browned.
Meanwhile in a dry skillet toast sliced almonds just until lightly browned.
Drizzle with honey and sprinkle with toasted sliced almonds. Enjoy!
