Fruit Brandy

Prepare Fruit Syrup:

1. Wash and crush fruit (my favorites are raspberry, cherry, cranberry, apricot which was Dads favorite. The only fruit I tried that I did not like was Concord grapes. My grandmother grew them so I gave it a try. Ed and Mara used to have pears trees. Pears make a lighter tasting brandy.

2. Add 1 cup sugar per cup of fruit

3. Add 2 cups of vodka per 1 cup of fruit

4. Add a cinnamon stick (I break it in half) (for my glass beakers:

2 Cups Crushed Fruit

2 Cups Sugar

4 Cups Vodka

2 Cinnamon Sticks)

Mix in glass jar, cover with plastic wrap and secure with twist tie. I have used rubber bands but they wear out in the sun so prefer twist ties.

To get the seeds out pour the brandy through strainer lined with a coffee filter. You will need to replace the coffee filter once in awhile during this step. If it looks clear go ahead and bottle it. Or you could put a funnel lined with a coffee filter into into the bottle and further strain the brandy.

If you prefer you could bottle the brandy without this second straining and once the sediment settles do the second straining.p
