Honey Lavender Cookies

½ teaspoon (2.5 ml) lavender flowers

½ cup (115 g) unsalted butter, softened

¾ cup (94 g) honey

1 large egg, room temperature

1½ cups (195 g) whole wheat flour

1 teaspoon (5 ml) baking powder

½ teaspoon (2.5 ml) salt

1️⃣ Preheat & Prep

Preheat your oven to 350°F (176°C).

Line cookie sheets with parchment paper or silicone baking mats.

2️⃣ Grind the Lavender

Use a coffee grinder, mortar and pestle, or small blender to gently break down the lavender flowers.

Don’t over-grind, or you risk a soapy flavor.

3️⃣ Cream the Butter & Honey

In a mixing bowl, cream together the softened butter and honey until smooth.

Add the egg and mix thoroughly.

4️⃣ Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, salt, and ground lavender.

5️⃣ Mix Wet & Dry

Stir the dry mixture into the wet mixture just until no flour streaks remain.

Avoid overmixing to keep the cookies tender.

6️⃣ Shape & Bake

Drop spoonfuls of dough onto the prepared baking sheets.

Gently press each cookie with the back of a spoon or your fingertips.

Bake for 10–12 minutes, until the edges are lightly browned.

7️⃣ Cool & Store

Transfer the cookies to a cooling rack.

Store in an airtight container for up to a week (though they rarely last that long!).
