Potato, rocket and garlic soup

50g unsalted butter

4 onions peeled and chopped

1 head of garlic cloves peeled see tip

225ml white wine

600g medium or large waxy potatoes peeled and sliced

1.2 litres chicken stock

sea salt and black pepper

200g rocket

1. Melt the butter in a large saucepan over a medium-low heat, add the onions and whole garlic cloves, and fry for 6-7 minutes until soft and glossy, stirring occasionally and without colouring. Add the wine, turn up the heat and reduce by about two thirds.

2. Add the potatoes, the chicken stock and some seasoning, then simmer over a low heat for 15-20 minutes or until the potatoes are tender. Add the rocket, which will wilt instantly, and purée the soup in a blender – it will be smooth but flecked with green.

3. Ladle into warm soup bowls and serve with a dollop of crème fraîche and a few rocket leaves, chopped if wished.

The brilliant green dulls in colour after a couple of hours, but the taste remains the same.
