Peanut Butter S’mores Sandwich Cookies

For the Peanut Butter Cookies:
1 cup (2 sticks) unsalted butter, softened
¾ cup creamy peanut butter
¾ cup granulated sugar
¾ cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
For the Marshmallow Filling:
3 cups mini marshmallows
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
Optional Coating:
½ cup finely crushed graham crackers
¼ cup melted chocolate (for drizzling)

Prepare the Cookie Dough:
Combine softened butter, peanut butter, granulated sugar, and brown sugar in a large bowl. Beat until light and fluffy. Add the egg and vanilla, mixing until fully incorporated. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture, blending until a soft dough forms. Chill the dough for 30 minutes.
Shape and Bake the Cookies:
Preheat the oven to 350°F (175°C). Roll the chilled dough into 1-inch balls and place them on a parchment-lined baking sheet. Flatten each ball slightly. Bake for 10–12 minutes or until the edges are lightly golden. Let the cookies cool completely.
Make the Marshmallow Filling:
Combine mini marshmallows, peanut butter, and vanilla in a medium bowl. Stir until the marshmallows are evenly coated.
Assemble the Sandwich Cookies:
Spread a generous amount of marshmallow mixture onto the flat side of one cookie. Top with another cookie.
Optional Dipping or Drizzling:
Roll the sides in crushed graham crackers or drizzle melted chocolate over the top of each sandwich for extra flair.
