Caramelized Orange Maple Chicken ( or Salmon )

For the chicken:
2–3 chicken breasts or 4–5 thighs (boneless or bone-in)
Salt & pepper, to taste
1 tbsp olive oil
1 tbsp butter
For the caramelized orange-maple glaze:
½ cup freshly squeezed orange juice (about 1 large orange)
Zest of 1 orange
2 tbsp pure maple syrup
1 tbsp soy sauce
1 tbsp brown sugar
2 garlic cloves, minced
1 tsp Dijon mustard (optional)
A pinch of chili flakes (optional for a sweet heat)
To finish:
Fresh thyme or rosemary
Orange slices (for garnish)

Prepare the chicken:
Pat the chicken dry, season both sides with salt and pepper.
Heat olive oil and butter in a skillet over medium-high heat.
Sear the chicken for 4–5 minutes per side until golden. Remove and set aside.
Make the glaze:
In the same pan, lower heat to medium and add garlic. Sauté for 30 seconds until fragrant.
Pour in orange juice, maple syrup, soy sauce, brown sugar, Dijon, and orange zest.
Stir and let it simmer for 3–4 minutes until slightly thickened and syrupy.
Caramelize and coat:
Return the chicken to the pan. Spoon the glaze over the chicken as it cooks for another 5–7 minutes, turning occasionally until the sauce reduces and coats each piece in a glossy orange sheen.
Finish & serve:
Sprinkle with fresh thyme and top with caramelized orange slices.
Serve hot over rice, roasted potatoes, or couscous — and drizzle that leftover glaze right on top! 😍
Tips
Add a splash of white wine or apple cider vinegar to balance the sweetness.
For an even deeper citrus flavor, toss in a few orange segments near the end of cooking.
Try it with duck or salmon — this glaze pairs beautifully with both!
