Mango Pineapple Cod with Coconut Rice

1 cup rice

1 can coconut milk

~ 1/4 cup water

Cod fillets, ~1 per person

Salmon rub seasoning

Avocado oil

Salt

Mango pineapple salsa

步骤

Wash your rice and add to a pot. Measure the coconut milk and add enough water to make sure you’re adding 2 cups of liquid to the pot. Bring to a boil and then down and let simmer until rice is done. 🍚

While the rice is cooking, season fish generously with salmon rub seasoning on both sides. Add some avocado oil to a hot pan over medium heat. Cook the fish until flakey, about 3 minutes on each side.

Serve with mango salsa🥭 and season with salt to taste
